Cured + Barrel Stave Smoked Salmon, Winter Citrus, Red Chile || Paired with Final Remark – BB Citrus Gin, Aperol, Mezcal, Lime

Ricotta Cavatelli, 12 Hour Beef Cheek Ragout, Piave Cheese || Paired with Barrel Aged Negroni – American Dry Gin, Cappelletti, Dolin Vermouth aged in Whiskey barrel additional 6 months

Course 3

Pork Ossobuco, Lentils, Roasted Garlic, Mustard Pork Jus || Paired with 4 Grain Bourbon

Black Button Bourbon Cream Chocolate Cremeux, Coffee Chantilly, Candied Pecans || Paired with Black Button Bourbon cream
